		<description>Hi Gigi! From what I understand, traditionally (in France) either anchovies or tuna are used - don&#039;t know if this is true or not. All of the Nicoise salads I had in France only had tuna, but then again, I never had one in Nice! (I looove anchovies btw!!)</description>

		<description>I just made a salad Nicoise for a picnic last week. I love your idea of dressing each of the components separately. Then I would have avoided the tossed mush I served!  I also like your tip about the garlic in the dressing.</description>
