I've used these french lentils ever since I discovered them in a health food store a couple of years ago. Your recipe is a lot like my usual one--I sometimes use kielbasa, or linguicia or pepperoni--any smoked meat ( a small amount). And then I add chopped spinach just at the end of cooking (or chopped kale, brocoli, chard etc) adds a bit of green veggie.

I bought some proscitto ends and thought hmmwhat can I do with them? How about Lentil & prosciutto soup instead of ham hock. So I googled, yours came up first and seemed the nicest - liked the pix.
I made it and it was delicious and I'm sending it to a friend. I had the parmesan rind and it made it Fab! Quick & easy gourmet! Thanks

That soup looks delicious. I've never cooked lentils myself but I bought a bag a few months ago to experiment with. This may be my first foray into the world of lentils:-)
